This April our TSMM pairing brings together elegant Northern & central Italian wines with a Truly Singaporean Makan & Minum menu that is bold, familiar and full of character.

This curated selection takes you from the cool, sparkling vineyards of Treviso in Veneto, through the refined hills of Piedmont, into the historic heart of Tuscany, and finally to the rich, powerful wines of Valpolicella.

Together, these regions showcase the full spectrum of Italian winemaking—from fresh and vibrant to deep and complex—each crafted not just to be enjoyed on its own, but to come alive at the table.

Paired with the bold, familiar flavours of Singapore, this journey reveals how great wines transcend borders—elevating every dish, and telling a story in every glass.

🌿Treviso (Veneto)

The Heart of Prosecco

Located in northeastern Italy within the Veneto region, Treviso is the core production zone for Prosecco DOC, especially around the plains and gentle hills north of Venice.

🌿 Key Characteristics

  • Climate: Cool continental with Adriatic influence → preserves acidity

  • Terrain: Flat plains + rolling hills → ideal for high-yield, fresh styles

  • Grape: Glera

🍷 Wine Style

Treviso produces light, aromatic, fruit-forward sparkling wines:

  • Green apple, pear, white flowers

  • Crisp acidity with soft, approachable sweetness

  • Typically made using the Charmat method (tank fermentation)

🍇 Piedmont (Piemonte)

Italy’s Noble Land of Structure & Elegance

Located in northwestern Italy at the foothills of the Alps, Piedmont is one of Italy’s most prestigious wine regions, known for both powerful reds and refined whites.

🌿 Key Characteristics

  • Climate: Continental with fog (“nebbia”) → slow ripening

  • Terrain: Steep hills, limestone & clay soils → complexity and structure

  • Philosophy: Terroir-driven, traditional, age-worthy wines

  • Climate: Warm Mediterranean with cooling hillside breezes

  • Terrain: Rolling hills, limestone (galestro) and clay soils → elegance + structure

  • Grape: Predominantly Sangiovese

Chianti Classico is known for its balance, vibrancy, and food-friendliness:

Located in the Veneto region near Verona, Valpolicella is one of Italy’s most dynamic wine zones, producing styles that range from light and fresh to some of the most powerful wines in the world.

🌿 Key Characteristics

  • Made by re-fermenting Valpolicella wine on Amarone grape skins

  • Gains added depth, colour, and complexity

🍷 Wine Style

  • Ripe cherry, plum, dried fruit, spice

  • Medium to full-bodied with smooth tannins

  • Richer than classic Valpolicella, but more approachable than Amarone

  • Known as “baby Amarone”

  • A perfect balance of value, richness, and drinkability

🔥 Amarone della Valpolicella

Italy’s Noble Powerhouse

  • Produced using the Appassimento method (air-dried grapes)

  • Dried cherry, fig, raisin, chocolate, spice

  • Full-bodied, high alcohol, velvety texture

  • Intense, complex, and long-lasting finish

Food & Wine Pairing Menu

The Pairing:

We begin with Ponte Prosecco White DOC NV paired with Salted Egg Yolk Fish Skin and Top Shell Salad à la New Ubin Seafood in a sesame-ponzu dressing. The lively bubbles, freshness and orchard-fruit notes help lift the richness of the salted egg and complement the savoury, nutty salad beautifully.

Giovanni Rosso Roero Arneis DOCG 2023 is served with Pan-Fried Halibut Bites with Hong Kong Sauce and Assam Chinchalok Sauce. Its floral, mineral and gently rounded profile gives enough freshness to balance the fish while also standing up to both sauces.

Riecine Chianti Classico DOCG 2023 is paired with Heritage Dry Laksa with Prawns. The wine’s bright acidity, red fruit and elegance offer a lively contrast to the aromatic richness of the laksa.

Tenuta Sant’Antonio Valpolicella Ripasso Monti Garbi 2021 accompanies Braised Pork with Greens, or Braised Chicken with Greens for pork-averse guests. Its supple texture and savoury spice make it a natural match for warm, comforting braised flavours.

Tenuta Sant’Antonio Amarone della Valpolicella Antonio Castagnedi 2020 is paired with Nasi Lemak featuring Beef Rendang, or Chicken Rendang for those who do not take beef, together with Sambal Kang Kong Joo Hee and Kunyit Spanish Sardines. This is the boldest pairing of the evening, with the Amarone’s richness and depth standing up beautifully to the intensity and warmth of the dish.

We end on a Truly Singaporean note with Kaya Toast & Chendol, served with local Kopi / Teh, for a nostalgic and satisfying finale.
