French wines are arguably one of the world’s best, if not the best, wine regions. With centuries of winemaking and tradition, wine and food is an integral aspect of everyday life in France. Come join us as we replicate these experiences and traditions.
Loire Valley
We begin our journey in the cool, coastal Loire Valley with a bone-dry, bracingly crisp white. Known for its electric acidity and saline minerality, this wine acts as the perfect refreshing foil—cutting through the rich, savoury indulgence of our Salted Egg Squid and fried delights to leave your palate perfectly primed for the next bite.
Chablis
Next, we experience Chardonnay in its purest form: Chablis. Unlike the buttery styles of the New World, this wine is stainless-steel aged to preserve its sharp, flinty character. Its mineral-driven purity and citrus zip are a masterclass in balance, elegantly lifting the creamy textures of our Pollock Burger and signature sauces
Saint-Émilion
We travel to the prestigious Right Bank of Bordeaux, where Merlot reigns supreme. This powerful, full-bodied Saint-Émilion offers a velvet-like texture and deep plum notes. Its plush structure and rounded tannins provide a sophisticated embrace for the nostalgic, savoury flavours of our Hainanese Chicken Chop
Languedoc
Languedoc produces a wide variety of wines, often at excellent value. This region is world-renowned for its Grenache, Syrah, Mourvèdre (classic GSM) blends as well as Syrah (Shiraz). We feature a young 2023 GSM with soft tannins and slight spicy notes on the palate. The slight spice of the palate allows for one to really enjoy Teochew style duck & pork the way it was meant to be enjoyed, with some chillies, of course. With this course, we pay homage to our CEO cum owner, Mr. Pang Seng Meng, who comes from an eclectic background that includes being Teochew.
Rhône Valley
The Rhône Valley stretches along the Rhône River in southeastern France. It is divided into the Northern Rhône (with generally cooler climates) and the Southern Rhône (with generally warmer climates). We bring a 100% Syrah (Shiraz) from the Northern Rhône that comes from a steep hilly terroir. The strong tannins and full body combine well with the tannins, helping to cut through the heaviness and fat of our USDA Black Angus ‘Choice’ Ribeye, while the full body ensures the wine is not overpowered.
Garang Smoked Burgers(GSB) and Pink Kat Wok Xpress(PKWX)
GSB and PKWX are New Ubin Seafood’s bold sub-brands—Garang Smoked Burgers and Pink Kat Wok Xpress—each offering a distinct expression of modern Singapore dining. Garang Smoked Burgers brings a smoky, contemporary take on local flavours through a gourmet burger lens, while Pink Kat Wok Xpress channels the fast, fiery energy of wok-fired zi char with a confident, sassy edge. Nose: This mid-weight wine expresses deep spice, graphite and pepper aromatics that are encouraged by its more reductive winemaking blend of cement and large barrels.
Palate: The palate is always fresh with dark fruit, forest floor and a graphite-like texture. This is a classic Crozes with a sharp focus that opens up in the bottle after fifteen minutes or so to reveal its more charming side.
