Castilla y León
Spain’s Timeless Wine Heartland
Castilla y León, located in northwestern Spain, is not only the country’s largest autonomous region but also one of its most important wine-producing territories. Sprawling across the high central plateau of the Meseta Norte, this vast land is steeped in history — home to ancient Roman vineyards, medieval monasteries, and noble winemaking traditions that date back over 2,000 years.

Tapestry of Appellations in the Land of Castles
Castilla y León boasts nine prestigious Denominaciones de Origen (DOs) and one Vino de la Tierra (VT), each with a distinct identity:
Ribera del Duero DO – Known for powerful, age-worthy reds made from Tempranillo (Tinto Fino);
Rueda DO – Spain’s benchmark for Verdejo whites, known for their aromatic freshness, minerality, and finesse.
Toro DO – Ancient vineyards and robust Tinta de Toro reds, rich in power and structure.
Bierzo DO – Lush, Atlantic-influenced wines made primarily from Mencía, with minerality and elegance.
Cigales DO, Arribes DO, Tierra del Vino de Zamora DO, Arlanza DO, and León DO – Smaller appellations offering rosados, bold reds, and even unique whites.
Vino de la Tierra de Castilla y León – A regional designation allowing more flexibility in grape blends and styles.

Why Castilla y León Wines Stand Out
What sets Castilla y León apart isn’t just its size — it’s the diverse microclimates, unique soils, and altitude that shape wines of depth, freshness, and authenticity:
🌍 Geology & Soil
Soils vary across the region — from limestone and clay in Ribera del Duero, to gravelly alluvials in Rueda, to iron-rich sands in Toro.
These soils promote excellent drainage and stress the vines, resulting in low yields and high concentration in the grapes.
🌄 Altitude & Climate
Vineyards lie between 600 to over 1,000 metres above sea level — among the highest in Europe.
This altitude creates a dramatic diurnal temperature shift: hot days and cool nights that preserve acidity, aromatic intensity, and balance.
The continental climate — long, dry summers and harsh winters — favours organic practices and prevents disease pressure.
🍇 Indigenous Grape Varieties
Tempranillo (locally known as Tinto Fino or Tinta de Toro) thrives here with complexity, tannic structure, and ageing potential.
Verdejo, native to Rueda, is prized for its aromatic freshness, grassy-herbal notes, and ability to age beautifully.
🌬 Lack of Maritime Influence
Unlike coastal regions such as Rioja or Rías Baixas, Castilla y León’s wines are shaped more by altitude and continental extremes than sea breezes, making them bold, structured, and deeply expressive of terroir.
The Global Signature
Wines from Castilla y León have gained international acclaim, consistently receiving high ratings from critics like Robert Parker, Wine Spectator, and James Suckling. They are admired for their authenticity, ageing potential, and value, often rivaling more famous global regions in quality — without the price tag.
Whether it’s a crisp Verdejo, a structured Crianza, or a bold Tinta de Toro, Castilla y León offers wines of soul and story, rooted in ancient lands but made with forward-thinking precision.
Food & Wine Pairing Menu
The Pairing Menu:
Nachos with Pork Rendang
Paired with: Val de Vid Verdejo 2022
A bold twist on classic nachos, this dish features tender pork rendang atop crispy chips, delivering rich, spiced layers with coconut and lemongrass notes. The Verdejo’s zesty acidity and herbaceous character cut through the richness, cleansing the palate while enhancing the aromatic spices and tropical undertones of the rendang.
BBQ Cuttlefish, Egg Mayonnaise, Brioche Buns, Fermented Sriracha Chilli Sauce
Paired with: Hito Rosado 2023
A vibrant medley of smoky grilled cuttlefish and creamy egg mayo on toasted brioche, uplifted by the tang of fermented sriracha. The Hito Rosado’s crisp red berry notes and citrus lift balance the dish’s umami and spice, while its refreshing acidity adds brightness to the creamy and smoky elements.
Roasted Chicken with Black Pepper Brown Sauce, Mango Salad
Paired with: Cepa 21 Crianza 2021
Succulent roasted chicken bathed in peppery brown sauce is paired with a sweet-sour mango salad. The Cepa 21’s bold structure and dark berry fruit marry well with the sauce’s savoury spice, while its subtle oak and mineral tones echo the caramelised roast. The acidity refreshes the palate after each bite of mango and pepper.
US Supreme Pork Burger, Crispy Sea Salt Fries
Paired with: Mazas Crianza 2019
Juicy USDA grade pork patty served in a soft fluffy bun, complemented by crisp, sea salty fries. The Mazas Crianza, with its rich dark fruit and toasted oak, stands up to the burger’s savoury depth. Its smooth tannins and balsamic lift cut through the fat, enhancing both meat and fries with finesse.
Braised Beef Brisket with Capellini
Paired with: Pago de Santa Cruz de Viña Sastre 2021
Slow-braised brisket steeped in aromatic Chinese spices, paired with delicate capellini. The depth and elegance of Pago de Santa Cruz bring out the umami and anise-like warmth of the beef, while its silky tannins mirror the softness of the noodles. A pairing of power and grace.
DESSERT
Goreng Pisang with Coconut Ice Cream
A nostalgic tropical finish: crispy battered banana paired with creamy coconut ice cream. Sweet, warm, and cooling all at once—no wine needed, just pure comfort.
Each dish is thoughtfully paired with premium Castilla y León wines to create a perfect blend of complementing tastes, setting off palate fireworks to make this a truly memorable dining experience in celebration of our nation’s 60th birthday.
