Dictador's Heritage

The history of Dictador’s rum is steeped in the rich and colorful history of Colombia, dating back to 1913, when Destilería Colombiana was established. This marks the beginning of the family history of the brand. For three generations now, Family Parra, the master distillers of Dictador rum have strived for ultimate perfection, celebrating revered family-owned formulas, and elevating them to a masterful art.

Hernan Parra, Dictador Master Blender, enjoys great recognition in the world of aged spirits, and his rums have been awarded many times in international competitions including gold medals at the World Spirit Awards, San Francisco World Spirit Competition, Miami Rum Festival, Tokyo Whisky and Spirits Competition.

Rum and Food Pairing

Rum doesn’t limit itself to pairing with sweet deserts and savoury snacks these days. The rich asian food history stemming from the large influx of Chinese immigrants to Colombia in the early 1900s assimilated and blended intricacies of Asian flavours into the colourful Colombian food and beverage culture.

Food and rum combinations take many ideas into consideration including whether the rum will work better mixed into a cocktail or whether the food has enough body or texture to stand up to the strength of rum and its character. While many consumers may enjoy a cocktail before the main course, or spirits neat as a digestive after a meal, few will instinctively pair them with food. Few rum-savvy have come to realise this delicious tropical liquor (especially when it is aged) can also be paired with savoury dishes. The longer the rum is aged, gives deeper notes of its complexity.

Dictador Rum Pairing with Sweets

In this edition of Truly Singaporean Makan and Minum, we feature Dictador, which isn’t your traditional outright flat & sweet rum that does not give any character. Dictator ages its rum into a myriad spectRUM of complex tastes that made the range suitable for an awesome pairing with food. What better way to pair them with local colourful flavours that are Truly Singaporean?

New Ubin Seafood's Smoked Pork Collar

We consider some very key attributes when pairing with Dictador’s rums. The higher alcohol of spirits(compared to wine) requires a fuller bodied and more ‘Masculine’ type of vittles like Sambal Kang Kong, Pan-fried Halibut in Hongkong Sauce or even a charred smoked meat like our famously sweet Smoked Pork Collar, to keep the peace of palate balance. Rum’s general perceived sweet character, derived from its natural glycerin, has an inherent tendency to pair well with food that’s fresh and sweet, but also with salty savoury fare like the Salted Egg Fish Skin.

As a general rule, we prefer a pairing of equals or opposites when it comes to food and drinks synergies. Not just any opposites, mind you. It takes our Chefs’ dedication to finding the right opposites to create the bridge. Sweet & sour may go naturally well but not necessarily sweet & bitter in blatant contrasts.

So, here’s a primer on how we do the same with different styles and age statements of rum.

Flavour Bridges and the End of the Meal

We have long sought to match similar flavours of foods with the beverages with which they are paired. A Smoked Pork Collar drenched in sweet caramel sauce will taste divine with the strong-roasted coffee notes on the palate of the Dictador 10 Years. Strong flavourful meats like our featured Hongsiew Beef worked well with the complex, sweeter characters of the Dictador XO Perpetual.

Dictador 10 Years

METHOD

From the sumptuous Caribbean coast of Colombia, a new edition of Dictador is born. Aged 10 years in Colombian white oak barrels, called “Quercus Humbolti”, this unique rum displays a singular maturity while preserving the richness of its aromatic palette.

Tasting Notes:

Dark Orange copper colour with shimmering highlights, with chocolatey Nutella notes, coffee and fruity aromas. Walnut, honeyed sweet taste with intense coffee, cocoa and dried fruits. The finish comes in tow with mild ginger and peppery notes.

METHOD

Dictador rum aged 12 years is made from the fermentation of virgin sugar cane distilled partly in a copper alembic and partly in a steel continuous distillation column to obtain the signature medium-bodied rum. Aged in oak barrels and then bottled under the caring eye of an expert, the final liquid is of premium quality, and we can ensure that the secret of its flavour remains intact.

Tasting Notes:

Light copper colour with amber highlights, an intense treacle and maple syrup nose, tobacco and leather aromas. Dry fruits and honey on the palate with creamy spiced oak notes and a cigar, tobacco and coffee finish.

Dictador rum aged 20 years is made from the fermentation of virgin sugar cane distilled partly in a copper alembic and partly in a steel continuous distillation column to obtain the signature medium-bodied rum. Aged in oak barrels and then bottled under the caring eye of an expert, the final liquid is of premium quality, and they can ensure that the secret of its flavour remains intact.

TASTING NOTES

Intense dark amber colour. Big on the nose with muscovado sugar, cherry, caramel and vanilla aromas. Soft mouthfeel with toffee, maple, and creamy oak flavour with a strong dark chocolate and coffee finish.

Dictador XO Insolent

METHOD

DICTADOR RUM XO INSOLENT is made from the first press sugar cane juice fermented for 60 hours and 100% pot distilled. It is aged using the combination of ex-bourbon barrels, ex-sherry butts and charred port casks to give the rum those sweet and smoky flavours from the oak. By carefully hand-picking barrels from each year’s vintage, a master blender marries together these unique liquids to create that beautiful blend which is XO Insolent.

TASTING NOTES

A deep, mahogany shine that creates an unforgettable colour in the glass. A strong vanilla and honey nose with hints of white chocolate and parfait caramel. An extremely smooth mouthfeel with fudge, intense vanilla and Colombian coffee on the palate. A long finish delicately balanced with light oak for a sweet, yet strong experience.

METHOD

DICTADOR RUM XO PERPETUAL is made from the fermentation of unique virgin sugar cane and honey, distilled in an antique copper alembic still, then aged in premium quality, ex-bourbon barrels, as well as ex-sherry butts and port casks. Finally, the traditional family solera system is used where the master blender carefully balances the delicate smokey and sweet flavours to create this exquisite blend that pays homage to our ancestors and the legacy of DICTADOR.

TASTING NOTES

Deep mahogany brown with golden colours and super shine. Intricate notes of roasted honey, Colombian coffee, matured oak and vanilla. The mouthfeel is extremely smooth with hints of spice and oak to create a long, spicy, chocolate - filled finish.
