Truly Singaporean Makan and Minum
Baroque Burgundy
“A bottle of wine contains more philosophy than all the books in the world.”- Louis Pasteur, French Chemist & Pharmacist
The common theme underpinning the Baroque period and Burgundy's winemaking lies in the shared values of meticulous craftsmanship, historical tradition, and the pursuit of complexity and elegance. Both fields celebrate intricate details and rich cultural artistic heritage, creating a harmonious blend of art and quality that has stood the test of time. Together with our specially crafted pairing, we look forward to introducing tantalising dishes with sumptuous Burgundy wines.

Brief Introduction to Burgundy Wines
Whilst winemaking in this region started before the 1st Century AD, it was the Catholic Monks during the Middle Ages that really refined the art of winemaking, adapting and innovating the wines for the then aristocracy to enjoy. Although Burgundy(“Bourgogne”) may be small in size, it contributes significantly to the global culture of winemaking. Famed for Chardonnay and Pinot Noir, we will be featuring two Chardonnays from Chablis as well as three Pinot Noirs. For this event we will also be featuring Oak Aged Chardonnay from Chablis, unique from the usual stainless steel aging.
Brief Introduction to Chablis
Chablis is the furthest north region of Burgundy and is considered geographically set apart from Burgundy. The climate here fluctuates dramatically incorporating both cold winters & hot summers with good sunlight. The terroir here is “Kimmeridgian” limestone which is white and chalky. Whilst usually not aged with oak, we feature oak aged chadonnay that adds a savoury unctuous dimension to the overall flavour of the wine.
