INTRODUCTION TO SHINOBU

The Japanese concept of “Shinobu” meaning endurance, perseverance, and patience is of constant inspiration to the whisky makers of The Shinobu Distillery in Niigata. Where pristine streams fed by pure mountain snow reach the Sea of Japan. Shinobu Japanese Whisky requires just this patience and self-control for the master distiller to age each barrel for the right amount of time before meticulously blended to perfect flavour.
The Shinobu distillery of Niigata Beer Co. is found in Niigata Prefecture of Japan, known for its rich white treasures of "water source", "white rice", and "sake". Shinobu Distillery became the first whisky-making facility in the city when it was founded in 2018.
Ken Usama, the founder of Niigata Beer Co. Ltd. is an innovator at heart. Mr Usami was the first brewer to apply secondary bottle fermentation and aging in Niigata Beer. As an experienced brewer, Mr. Usami dreams of creating a local whisky distillery that will be able to showcase the quality of local pure water and serves the passionate community of spirit lovers. Eventually in 2017, Mr. Usami obtained the first whisky license for Niigata (another first!) and thus started his journey as taking on a distiller role.
While the distillery is still under construction, Mr. Usami expects to mix and match Japanese flavour with the world. Therefore the first batch of “SHINOBU MIZUNARA OAK FINISH” was born from this belief.
Master distiller Ken Usami is at the helm of its operation, creating a range of whiskies that includes The Shin Malt Whisky, The Shin Malt Whisky 10 Years Old and The Shin Malt Whisky 15 Years Old. He finishes each of these expressions in mizunara oak, developing a distinctive flavour profile that has put the producer on the world whisky map.
JAPANESE MIZUNARA OAK: THE RARE AND UNIQUE TO JAPAN
Mizunara oak, one of the rarest and most expensive types of oak in the world. its story is deeply rooted in Japanese history. During World War II, Japan was economically blocked by various countries and could not import oak barrels. At the end of the war, Japan soon faced shortages of imported casks, so whisky makers had to begin to use the native oak, Mizunara. The uniqueness of Mizunara oak is that it takes 200 to 500 years for the plant itself to be made as wooden barrels. It can blend with other flavours well, and offer offers complex notes of sandalwood, coconut, spice and Japanese incense, displaying the refinement of oriental flavour with powerful yet velvet mouthfeel.
All the SHINOBU Whiskies are matured in precious Japanese Mizunara casks for extracting the best flavour from the oaks. Famous for imparting rich, luscious flavours of apples, pears, cloves and nutmegs, Mizunara Oak has been used in Japan since the 1930s and is now sought-after by whisky makers around the world. All SHINOBU whiskies are made without chill-filtration nor added color to protect and enhance their complex and robust character.
NIIGATA’S THREE WHITE TREASURES
Niigata is well known locally for its “three white treasures,” namely snow, rice and sake. It is also a naturally blessed environment for pure water source; thus a perfect location for making whisky. In winter, when humid air from the sea passes over the japan and travels to the pacific left side, it causes Niigata snowfall to reach up. The snow remains in mountaintop, and gradually melts from the middle of summer and flows through the rivers in Niigata. This water eventually comes back to become the pure water source of local breweries and distilleries.
SHIN'S BRAND STORY
"SHIN" stands for "Integrity", which is one of the core principles of the Samurai tradition. Since 2012, Shin Group cooperated with distilleries that shares the same principles with us, and created the “SHIN” brand, representing high quality, pure liquor to their customers. Until today, the SHIN brand has developed series of uniquely Japanese alcohol products, including Whisky, Umeshu (plum wine) and Yuzu Wine, partnering with SHINOBU Distillery, Eigashima Distillery and Asahara Brewery.
The Shin Whisky is a co-brand between Shinobu Distillery and the Shin Group. Shin Group is one of the biggest Japanese liquor distribution companies focusing on unique and high-quality Japanese whisky. ‘Integrity’ is Shin Group’s company philosophy, and it perfectly matches Shinobu Distillery’s principles. ‘Shinobu’ means forbearance in Japanese, symbolising the spirit of the Japanese warrior, or samurai. They believe that making great spirits takes time, patience and persistence.
By partnering with Shin Group, Shinobu believes they will be able to come up with something completely different when it comes to distilling great Japanese whiskies. After several years of discussion and trials, they launched The Shin Malt Whisky, a luxury whisky that represents both Shin Group and Shinobu Distillery’s company spirit. Soon after The Shin Malt Whisky series launched, several positive responses from whisky reviewers and awards were received, including many Gold medals in Whisky competitions.
