A Journey Through Singapore Flavours and Spanish Wines

Singapore’s food culture was built on flavour, memory and community. From Wok Hei, Zi Char classics to hawker-inspired favourites and shared family-style dishes, our local table has always been about generosity, comfort and connection.

From Hawker Roots to Spanish Vines brings this familiar spirit together with the expressive wines of Spain. Across five courses, beloved Singapore flavours are reimagined and paired with wines from Cava, Priorat and Rioja — three regions that each bring their own character, history and sense of place.

Expect the brightness of Gran Reserva Cava against savoury bites, the textured minerality of Priorat with spice and umami, and the depth of Rioja alongside hearty meats and bold sauces. Each pairing is designed not to overpower the food, but to reveal new layers within dishes we already know and love.

This is a dinner about discovery without losing familiarity — where local comfort meets Spanish terroir, where hawker roots meet old vines, and where every glass invites a new conversation around the table.

Three Great Regions of Spain

The five wines featured this event represent a journey through three of Spain's most celebrated wine regions — Cava, Priorat and Rioja — each expressing a unique chapter of the country's rich winemaking heritage.

We begin with Mestres Visol Gran Reserva Brut Nature 2019, a traditionally crafted Cava from Penedès. Produced with more than five years of lees ageing and no added dosage, it reflects the elegance and precision that have established premium Cava among the world's finest traditional-method sparkling wines. Its vibrant freshness and complexity provide the perfect opening to the evening.

From there, we travel to the rugged slate hills of Priorat, one of only two regions in Spain awarded the prestigious Denominació d'Origen Qualificada (D.O.Q.) status. The Artigas Blanco 2020 showcases Priorat's ability to produce expressive white wines with remarkable texture, minerality and depth, while Els Pics 2022 offers a youthful and approachable interpretation of the region's powerful reds, highlighting the sun-ripened fruit and distinctive Mediterranean character for which Priorat is renowned.

The journey concludes in Rioja, Spain's most internationally recognised fine wine region and the country's first Denominación de Origen Calificada (D.O.Ca.). The Baigorri Crianza 2021 demonstrates the modern face of Rioja, combining vibrant fruit with refined oak ageing, while the acclaimed Remírez de Ganuza Reserva 2014 represents the pinnacle of traditional Rioja craftsmanship. Produced only in exceptional vintages and matured patiently over many years, it exemplifies the elegance, complexity and longevity that have made Rioja one of the world's great wine regions.

Together, these five wines tell a story of Spain's remarkable diversity — from the chalky vineyards of Cava and the dramatic slate terraces of Priorat to the historic valleys of Rioja. Each bottle carries the character of its land, its people and its traditions, offering a fitting companion to the flavours of Singapore's culinary heritage.

The Pairing Journey:

First Course

Treasured Rice Golden Wing & Heritage Chye Poh Carrot Cake

Paired with 2019 Mestres Visol Gran Reserva Brut Nature

We begin with two familiar local favourites that showcase savoury richness and texture. The glutinous rice stuffed in deep fried chicken wing offers sticky, aromatic depth, while the carrot cake brings umami notes from preserved radish and wok-fried caramelisation.

The fine bubbles and vibrant acidity of the Mestres Visol act as a palate awakener, lifting the richness of the fried chicken wing while refreshing the palate after each bite. Extended ageing on lees contributes subtle notes of brioche and toasted nuts that echo the roasted flavours developed in the carrot cake. The result is a pairing that feels both comforting and elegant, setting the stage for the evening ahead.

Second Course

Pork Rendang Spice Nachos & Golden Salted Egg Fish Skin

Paired with 2020 Artigas Blanco

This course celebrates bold Singaporean flavours. The aromatic spices of pork rendang and the savoury richness of salted egg fish skin present a challenge for many white wines, yet Priorat's Artigas Blanco rises effortlessly to the occasion.

Its generous texture and ripe fruit character soften the warmth of the spices, while the wine's natural freshness prevents the palate from becoming overwhelmed. Hints of minerality and subtle oak provide an additional layer of complexity that complements the savoury depth of both dishes. The pairing demonstrates how a serious white wine can stand confidently alongside robust local flavours.

Third Course

Imperial Chicken Fuyong & Sang Choi Garden Wraps

Paired with 2022 Els Pics

The delicate savouriness of shredded chicken fuyong and the freshness of sang choi (lettuce) wraps call for a red wine that is expressive without being overpowering.

Els Pics delivers vibrant red and black fruit, gentle spice and supple tannins that enhance the sweetness of the chicken while respecting the dish's lighter character. The freshness of the lettuce wraps creates a natural bridge to the wine's lively fruit profile, while subtle Mediterranean herbal notes in the wine add another dimension to the overall experience. This pairing highlights harmony rather than contrast.

Fourth Course

Ocean Harvest Beancurd Pot & Kong Poh Venison

Paired with 2021 Baigorri Crianza

This course brings together two contrasting elements: the delicate sweetness of seafood and shellfish alongside the bold, aromatic flavours of Kong Poh venison.

Baigorri Crianza's fresh dark fruit and refined oak influence allow it to navigate both worlds. Its fruit character complements the natural sweetness found in the seafood, while notes of spice and toasted oak resonate beautifully with the Kong Poh seasoning. The wine's polished structure ties the dishes together, creating a seamless transition into the heartier portion of the meal.

Fifth Course

Charcoal-Grilled Kalbi, Kimchi & Onion Bread Loaf

Paired with 2014 Remírez de Ganuza Reserva

The evening reaches its crescendo with richly marinated Korean-style beef short ribs accompanied by tangy kimchi and freshly baked onion loaf.

A mature Rioja Reserva is the ideal partner. Years of bottle ageing have transformed youthful fruit into layers of dark cherry, spice, tobacco and savoury complexity. The wine's silky texture mirrors the tenderness of the beef, while its depth of flavour stands comfortably alongside the smoky sweetness of Kalbi. The gentle acidity refreshes the palate against the richness of the meat, and its evolved savoury notes create an elegant dialogue with the fermented character of the kimchi.

This final pairing showcases the timeless relationship between mature Rioja and slow-cooked meats, bringing the journey from Singapore's hawker roots to Spain's great vineyards to a memorable conclusion.

Dessert

Emerald Bean Elixir

A warm bowl of traditional green bean soup provides a simple and comforting finale. Its gentle sweetness allows guests to savour the lingering impressions of the evening's wines while ending the meal in a manner that feels unmistakably Singaporean.
